It’s Not Easy Being Green: a (savory) gluten free vegan stomach ache remedy recipe

If you been feeling under the weather, especially from a stomach complaint, this one is for you.

The usual plan for someone with a stomach virus or ache is to adhere to the BRAT diet until it sorts itself out. Attrition is the plan.

However, BRAT stands for Bananas, Rice, Apple(sauce), and Toast- which really means Bananas, Rice, Apple(sauce), and Toast. Not so good for the gluten free, meaning that often malnutrition is the reality.

So here is a recipe to help an ailing gluten sensitive vegan out. It combines the easy digestion of rice, ginger, and buckwheat (if you choose to add buckwheat) with the nutritiousness of miso and quinoa (if you choose to add quinoa).

The Stuff

1 cup cooked rice (I use a white and brown rice, quinoa and buckwheat mix where you just cook it all like it is white rice)

2-3 cups of vegetable stock

1 tbsp miso paste (red is often gluten free, white is often not)

2 cloves sliced garlic

sliced mushrooms

sliced ginger

The Method:

Cook your rice (mix), if you haven’t already.

Fry up the ginger, garlic, and mushrooms. Add the miso,  stock and rice. Boil it until the rice starts to break up. Add water or stock as the stock boils off. You want a thick, stewish consistency.

Season with salt and pepper at the end.

Add sliced green onion if you can handle it. It lightens the whole thing. Peanuts also work really well.

I hope you feel better soon!!
